A tip on Matcha
Did you know most 'mathca' sold in the United States is not true 'matcha',?
True matcha is made from 'tencha'. To produce tencha, the tea trees are covered under black cloth to prevent the leaves from sunlight for a couple of weeks before harvest.
This process provides the leaves a very dark rich shade of green.
After harvest, the leaves get de-veined, de-stemmed and ground into fine tencha powder, and this is 'matcha'.
All the laborious processes make the tea so aromatic and flavorful. The greener matcha powder is, the higher the quality is.
