What's Shiratama?

Shiratama are dumplings made from glutinous rice flour called shiratama-ko. Shiratama flour is made by washing glutinous rice well, soaking it slowly, then mashing it with a stone mortar and drying the precipitated product. Because the starchy substance of the glutinous rice is extracted, the texture of shiratama is much more smooth than that of mochi! Once powdered, they are soft and easy to eat for all ages, which is a great point.
